Ingredients

2 cups of crunchy peanut butter cereal (like Peanut Butter Crunch)

1 cup of rolled oats

1 cup of crispy rice cereal

1/2 cup of honey

1/2 cup of creamy peanut butter

1 teaspoon of vanilla extract

1/4 teaspoon of salt

1/2 cup of mini chocolate chips (optional)

1/4 cup of chopped nuts (walnuts or almonds, optional)

Instructions

Prepare the Pan: Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal later. Lightly grease the parchment with cooking spray for easier cutting.

Mix Dry Ingredients: In a large mixing bowl, combine the crunchy peanut butter cereal, rolled oats, crispy rice cereal, and any optional chopped nuts. Stir until well mixed.

Heat Wet Ingredients: In a small saucepan over low heat, combine the honey, creamy peanut butter, vanilla extract, and salt. Stir continuously until the mixture is smooth and combined, about 2-3 minutes. Do not let it boil.

Combine: Pour the warm peanut butter mixture over the dry cereal mixture. Stir quickly with a spatula or spoon until all the dry ingredients are coated.

Add Chocolate Chips: If using, fold in the mini chocolate chips until evenly distributed throughout the mixture.

Transfer to Pan: Spoon the mixture into the prepared baking dish. Use a piece of parchment paper or a spatula to press it down firmly and evenly into the dish.

Chill: Allow the bars to cool at room temperature for about 30 minutes. For quicker setting, place in the refrigerator for an additional 15-20 minutes.

Cut and Serve: Once set, lift the bars out using the parchment overhang. Cut into squares or rectangles as desired. Store leftovers in an airtight container at room temperature for up to a week.
