1 cup creamy peanut butter

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking soda

1/4 teaspoon salt

1 cup all-purpose flour

1 cup chocolate chips

12 mini peanut butter cups, unwrapped

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Melt Peanut Butter: In a microwave-safe bowl, gently warm the peanut butter for about 20-30 seconds until it’s slightly runny. This will make it easier to mix.

      Mix Sugars: In a large mixing bowl, combine the warmed peanut butter with the granulated sugar and brown sugar. Mix well until smooth and creamy.

        Add Egg & Vanilla: Stir in the egg and vanilla extract until fully incorporated into the mixture.

          Combine Dry Ingredients: In a separate bowl, whisk together the baking soda, salt, and all-purpose flour. Gradually add this mixture to the peanut butter mix, stirring until just combined. Fold in the chocolate chips.

            Shape Cookies: Using a tablespoon, scoop out portions of cookie dough and roll them into balls. Place them on the prepared baking sheet, leaving enough space between each cookie to allow for spreading.
