At the heart of this Sizzling Pepper Steak Stir-Fry is flank steak, a cut known for its rich flavor and tender texture when cooked properly. Flank steak is a lean cut of beef taken from the abdominal muscles of the cow, which gives it a distinctive grain and a robust taste. This makes it ideal for stir-frying, as it can absorb marinades well and cooks quickly.

Ingredients

1 lb flank steak, thinly sliced against the grain

1 tablespoon soy sauce

1 tablespoon oyster sauce

1 teaspoon cornstarch

1 tablespoon vegetable oil

1 red bell pepper, sliced

1 green bell pepper, sliced

1 onion, sliced

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

2 green onions, chopped

2 tablespoons hoisin sauce

1 tablespoon sesame oil

Salt and pepper to taste

Cooked jasmine rice or noodles, for serving

Instructions

In a mixing bowl, combine the sliced flank steak with soy sauce, oyster sauce, and cornstarch. Toss well to coat the meat thoroughly. Marinate for at least 20 minutes.

Heat vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated steak in a single layer. Sear for 2-3 minutes until browned, then flip and cook for an additional 2 minutes. Remove the steak from the skillet and set aside.

In the same skillet, add the sliced onion, red and green bell peppers, garlic, and ginger. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

Return the cooked steak to the skillet with the vegetables. Add the hoisin sauce and sesame oil, stirring everything together until heated through, about 2 minutes.

Season the stir-fry with salt and pepper to taste. Toss in the chopped green onions just before serving.

Serve the pepper steak stir-fry over a bed of jasmine rice or noodles and enjoy!
