1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

⅓ cup granulated sugar

2 (8 oz) packages of cream cheese, softened

1 cup powdered sugar

2 large eggs

1 teaspoon vanilla extract

1 tablespoon lemon juice

½ teaspoon salt

Preheat your oven to 325°F (160°C). Line an 8x8 inch baking dish with parchment paper, allowing the edges to hang over for easy removal later.

    In a medium bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until well combined.

      Press the graham cracker mixture firmly into the bottom of the prepared baking dish to create an even crust. Bake in the preheated oven for about 10 minutes, then remove and let cool slightly.

        In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes.

          Gradually add the powdered sugar, mixing until fully incorporated and the mixture is fluffy.

            Add the eggs, one at a time, mixing well after each addition. Then incorporate the vanilla extract, lemon juice, and salt until combined and smooth.

              Pour the cream cheese mixture over the cooled crust, spreading it evenly.

                Bake in the oven for 25-30 minutes, or until the edges are set and the center has a slight jiggle.

                  Turn off the oven, crack the door open, and let the cheesecake bars cool in the oven for about an hour to avoid cracking.

                    Once cooled, refrigerate for at least 4 hours or overnight for the best texture.

                      Using the parchment overhang, lift the cheesecake bars out of the dish and slice them into squares.
