4 large russet potatoes (for fries)

1 lb flank steak, thinly sliced

1 tablespoon olive oil

1 green bell pepper, sliced

1 small onion, sliced

1 cup provolone cheese, shredded

Salt and pepper, to taste

1 teaspoon garlic powder

1 teaspoon smoked paprika

Fresh parsley, chopped (for garnish)

Prepare the Fries: Preheat the oven to 425°F (220°C). Wash and slice the russet potatoes into thin strips (about ¼ inch thick). Toss them with olive oil, salt, pepper, garlic powder, and smoked paprika. Spread them in a single layer on a baking sheet.

    Bake the Fries: Bake for 30-35 minutes, flipping halfway through, until golden and crispy.

      Cook the Steak: While the fries are baking, heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the sliced flank steak and sear for about 2-3 minutes until browned. Season with salt and pepper. Remove the steak from the skillet and set aside.

        Sauté Vegetables: In the same skillet, add the sliced green bell pepper and onion. Sauté for 5-6 minutes until they are softened and slightly caramelized.

          Combine Ingredients: Return the cooked steak to the skillet with the vegetables and toss until combined.

            Assemble the Dish: Once the fries are done baking, remove them from the oven and pile the steak and vegetable mixture over the top. Evenly sprinkle the shredded provolone cheese over the assembly.

              Melt the Cheese: Return the loaded fries to the oven for an additional 3-5 minutes, or until the cheese has melted and is bubbly.

                Serve and Garnish: Remove from the oven and garnish with freshly chopped parsley. Serve immediately while the cheese is gooey and the fries are hot.
