Ingredients
  

1 lb ribeye steak, thinly sliced

1 medium onion, thinly sliced

1 medium green bell pepper, thinly sliced

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper, to taste

4 slices provolone cheese

4 hoagie rolls

2 tablespoons mayonnaise

1 teaspoon Dijon mustard (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Steak: Season the thinly sliced ribeye steak with garlic powder, salt, and pepper. Set aside.

    Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add sliced onions and bell peppers. Sauté for about 5-7 minutes until the vegetables are soft and lightly caramelized.

      Cook the Steak: Push the vegetables to one side of the skillet and add the seasoned ribeye to the other side. Cook for 3-4 minutes until the steak is browned, mixing it with the veggies as it cooks.

        Melt the Cheese: Divide the steak and vegetable mixture into sections within the skillet. Place a slice of provolone cheese over each section. Cover the skillet with a lid and let it cook for another 2 minutes, or until the cheese is melted.

          Prep the Rolls: While the steak is cooking, slice the hoagie rolls open and spread a thin layer of mayonnaise on each side. For an extra kick, add Dijon mustard if desired.

            Assemble the Melt: Once the cheese has melted, using a spatula, carefully lift the cheesesteak mixture out of the skillet and fill each hoagie roll to the brim.

              Toast the Sandwiches (Optional): For a crispy finish, you can toast the assembled sandwiches in a pan or a sandwich press for about 2-3 minutes on each side.
