Pierogi Sausage Skillet

1 package (16 oz) frozen potato and cheese pierogi

1 tablespoon olive oil

1 pound smoked sausage (kielbasa or your choice), sliced

1 medium onion, thinly sliced

1 red bell pepper, diced

1 cup sauerkraut, drained

2 cloves garlic, minced

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet, heat the olive oil over medium heat.

    Add the sliced sausage to the skillet and cook until browned, about 5-7 minutes. Remove the sausage and set aside.

      In the same skillet, add the sliced onion and bell pepper. Sauté until softened, about 4-5 minutes.

        Stir in the minced garlic and cook for an additional minute until fragrant.

          Add the drained sauerkraut and paprika to the skillet, stirring to combine. Cook for another 2-3 minutes.

            Carefully add the frozen pierogi to the skillet, making sure to spread them out evenly. Add 1/2 cup of water and cover the skillet with a lid, letting them steam for 7-10 minutes until warmed through.

              Once the pierogi are cooked, remove the lid, and add the cooked sausage back into the skillet. Stir gently to combine and let everything heat through for an additional 2-3 minutes.

                Season with salt and pepper to taste.
