2 cups vanilla ice cream

1 cup coconut milk

1 ripe banana, frozen

1 cup pineapple chunks (fresh or canned)

1 tablespoon shredded coconut (toasted for added flavor)

1 teaspoon vanilla extract

Whipped cream (for topping)

Extra pineapple slices and maraschino cherries (for garnish)

Instructions
 

In a blender, combine the vanilla ice cream, coconut milk, frozen banana, pineapple chunks, shredded coconut, and vanilla extract.

    Blend on high speed until smooth and creamy, about 30-45 seconds, scraping down the sides if necessary.

      Taste the milkshake and adjust the sweetness by adding more coconut milk or sugar if desired. Blend again briefly.

        Pour the milkshake into chilled glasses, filling each about three-quarters full.
