1 ripe pineapple, peeled and cored

1 cup coconut water

1 tablespoon fresh lime juice

1 tablespoon honey (or agave syrup for a vegan option)

1/2 teaspoon freshly grated ginger (optional for a spicy kick)

Fresh mint leaves, for garnish

Instructions
 

Cut the peeled pineapple into chunks and place them in a blender.

    Add the coconut water, lime juice, honey, and grated ginger into the blender.

      Blend on high until the mixture is smooth and all the ingredients are well combined.

        Taste and adjust sweetness by adding more honey or lime juice if desired.

          To serve, fill a glass with ice cubes and pour the blended pineapple mixture over the ice.

            Gently stir to combine and garnish with fresh mint leaves on top.
