1 lb kielbasa sausage

1 small fresh pineapple, peeled and cut into small cubes

½ cup brown sugar

2 tablespoons soy sauce (low sodium)

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 tablespoon olive oil

½ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    Prepare the kielbasa by cutting it into 1-inch thick slices. Then, make deep diagonal cuts across each slice, being careful not to cut all the way through (this will create a hasselback effect).

      In a small bowl, combine the brown sugar, soy sauce, garlic powder, smoked paprika, olive oil, and black pepper to create a glaze.

        Place the kielbasa slices on a parchment-lined baking sheet and brush them generously with the glaze, ensuring the sauce seeps into the cuts.

          Scatter the pineapple cubes around the kielbasa on the baking sheet and drizzle any remaining glaze over the pineapple.

            Bake in the preheated oven for about 20-25 minutes, until the kielbasa is heated through and slightly caramelized, and the pineapple is golden.

              Remove from the oven and allow to cool slightly before serving.
