2 cups all-purpose flour

1 ½ cups granulated sugar

1 cup unsalted butter, softened

4 large eggs

1 cup crushed pineapple, drained

1 teaspoon vanilla extract

1 teaspoon baking powder

1 cup cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

2 tablespoons pineapple juice (reserved from the crushed pineapple)

1 teaspoon vanilla extract

For Garnish:

Fresh pineapple slices

Toasted coconut flakes

Maraschino cherries

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Make the Cake Batter:

      - In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

        - Add the eggs one at a time, mixing well after each addition. Pour in the vanilla extract and crushed pineapple, stirring until combined.

          - In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet mixture, beating until just combined.

            Bake the Cakes:

              - Divide the batter evenly between the prepared cake pans. Smooth the top with a rubber spatula.

                - Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

                  - Once baked, remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring to wire racks to cool completely.

                    Prepare the Frosting:

                      - In a medium bowl, beat the cream cheese and butter together until creamy and smooth.

                        - Gradually add the powdered sugar, mixing on low speed until combined. Pour in the reserved pineapple juice and vanilla extract, then beat until the frosting is fluffy and smooth.

                          Assemble the Cake:

                              - Place the second cake layer on top of the frosted layer and frost the top and sides of the entire cake.
