2 cups all-purpose flour

1 ½ cups granulated sugar

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 cup unsweetened pineapple juice

½ cup vegetable oil

3 large eggs

1 teaspoon vanilla extract

1 cup crushed pineapple, drained

½ cup unsweetened coconut flakes

1 teaspoon grated lime zest

1 cup cream cheese, softened

2 cups powdered sugar

1 tablespoon fresh lime juice (for frosting)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt until combined.

      In a separate bowl, mix the pineapple juice, vegetable oil, eggs, and vanilla extract until smooth.

        Pour the wet mixture into the dry ingredients and mix until just combined. Do not overmix.

          Fold in the crushed pineapple, coconut flakes, and lime zest gently into the batter.

            Divide the batter evenly between the two prepared pans.

              Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

                Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

                  For the frosting, beat the softened cream cheese until creamy, then gradually add powdered sugar until well blended. Mix in lime juice and adjust if needed to reach desired consistency.

                    Once the cakes are completely cooled, place one layer on a serving platter. Spread a generous amount of cream cheese frosting on top.

                      Place the second layer on top and frost the top and sides of the cake.

                        Decorate with additional coconut flakes and lime slices if desired for a tropical touch.
