2 cups fresh pineapple, finely diced

1 red bell pepper, finely chopped

1/2 red onion, finely chopped

1 jalapeño, seeds removed and minced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 tablespoon honey (optional, for sweetness)

Salt and pepper to taste

Instructions
 

Begin by preparing the pineapple. Cut off the top and bottom, then slice off the skin. Remove the core and dice the flesh into small pieces.

    In a medium mixing bowl, combine the diced pineapple, chopped red bell pepper, red onion, and minced jalapeño.

      Add the chopped cilantro to the mixture.

        Squeeze the juice of two fresh limes over the salsa and mix well.

          If desired, stir in the honey to enhance the sweetness of the salsa, then season with salt and pepper to taste.

            Allow the salsa to sit for about 15 minutes at room temperature to let the flavors meld together.
