1 cup unsalted butter, softened

1 cup brown sugar, packed

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

1 cup crushed pineapple, drained well

1/2 cup chopped pecans or walnuts (optional)

Maraschino cherries for topping

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

      Beat in the eggs one at a time, followed by the vanilla extract, mixing well after each addition.

        In a separate bowl, sift together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

          Fold in the drained crushed pineapple and chopped nuts if using. The batter will be thick and slightly chunky.

            Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

              Place a Maraschino cherry (cut side down) in the center of each cookie and lightly press it down.

                Bake in the preheated oven for 12-15 minutes or until the cookies are set and lightly golden around the edges.

                  Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
