1 cup powdered sugar

1 large egg

2 tablespoons lemon juice

1 teaspoon lemon zest

2 cups all-purpose flour

1 teaspoon baking powder

1/2 cup pink lemonade drink mix (powdered)

1/4 cup white chocolate chips (optional)

Additional powdered sugar for dusting

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and lining two baking sheets with parchment paper.

    Cream the Butter and Sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and powdered sugar until the mixture is light and fluffy (about 3-4 minutes).

      Add Egg and Citrus: Beat in the egg, lemon juice, and lemon zest until well combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and pink lemonade drink mix.

          Mix Dry into Wet: Gradually add the dry mixture to the wet mixture, stirring until fully incorporated. If desired, fold in white chocolate chips for extra sweetness.
