Ingredients
  

1 large flour tortilla

1 cup fresh spinach, chopped

1/2 cup feta cheese, crumbled

1/4 cup cream cheese, softened

1/4 cup sundried tomatoes, chopped

1 clove garlic, minced

1 tsp olive oil

Salt and pepper to taste

Optional: 1/4 tsp red pepper flakes for a kick

Instructions
 

In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

    Add the chopped spinach to the skillet, cooking until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.

      In a mixing bowl, combine the sautéed spinach, feta cheese, cream cheese, sundried tomatoes, salt, pepper, and red pepper flakes (if using). Mix until well combined.

        Lay the flour tortilla flat on a clean surface. Spread the spinach and feta mixture evenly over the tortilla, leaving a small border around the edges.

          Starting from one end, tightly roll the tortilla into a log. Wrap it in plastic wrap and refrigerate for at least 30 minutes to help set the shape.

            After chilling, remove the wrap and slice the log into 1-inch thick pinwheels. Arrange them on a platter and serve!
