1 cup all-purpose flour

1 cup whole wheat flour

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/4 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 cup shelled pistachios, chopped

1/2 cup plain yogurt

1/2 teaspoon ground cardamom (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and set aside.

    In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

      Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.

        In another bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, salt, and cardamom if using.

          Gradually add the dry ingredients to the wet mixture, alternating with the yogurt. Mix until just combined; do not over-mix.

            Gently fold in the chopped pistachios until evenly distributed.

              Pour the batter into the prepared loaf pan and spread it out evenly.

                Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center of the bread comes out clean.

                  Once baked, allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
