4 large Yukon Gold potatoes, peeled and diced

1 medium onion, finely chopped

2 cloves garlic, minced

2 carrots, diced

1 stalk celery, diced

4 cups vegetable broth

1 cup heavy cream (or use coconut cream for a vegan version)

2 bay leaves

1 teaspoon dried dill

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

2 tablespoons olive oil

Instructions
 

Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for about 5 minutes, until translucent.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the diced carrots and celery, cooking for another 5 minutes until they begin to soften.

        Toss in the diced potatoes and pour in the vegetable broth. Add the bay leaves, dried dill, salt, and pepper.

          Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the potatoes are tender.

            Remove the bay leaves and use an immersion blender to purée the soup to your desired consistency. For a chunkier soup, blend just half and leave some potato pieces intact.

              Stir in the heavy cream (or coconut cream) and heat through for an additional 5 minutes. Adjust seasoning as necessary.

                Garnish with freshly chopped parsley before serving.
