Ingredients
  

1 lb ground beef or turkey

1 onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 cup cooked rice (white or brown)

1 cup shredded cheddar cheese

1 tsp chili powder

1 tsp cumin

Salt and pepper to taste

1 tsp olive oil

1 cup crushed tortilla chips (for topping)

Fresh cilantro, for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until the onion becomes translucent, about 5 minutes.

      Add the ground beef (or turkey) to the skillet. Cook until browned and fully cooked through, breaking it up with a spatula as it cooks. Drain any excess fat.

        Stir in the black beans, corn, diced tomatoes (with their juice), cooked rice, chili powder, cumin, salt, and pepper. Mix well to combine all ingredients.

          Remove the skillet from heat and stir in half of the cheddar cheese until melted and distributed throughout the mixture.

            Transfer the mixture into a greased 9x13 inch casserole dish. Top evenly with the remaining cheese and sprinkle the crushed tortilla chips over the top for added crunch.

              Cover the casserole dish with aluminum foil and bake in the preheated oven for 20-25 minutes. Remove the foil and bake for another 10-15 minutes, or until the cheese is bubbly and golden brown.

                Once done, remove from the oven. Let it cool for a few minutes before serving. Garnish with fresh cilantro if desired.
