4 bone-in pork chops (about 1-inch thick)

Salt and black pepper to taste

2 tablespoons olive oil

4 slices thick-cut bacon, chopped

1 small onion, finely chopped

3 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 teaspoon Dijon mustard

1 tablespoon fresh sage, chopped (or 1 teaspoon dried sage)

1 tablespoon fresh parsley, chopped (for garnish)

Prepare the Pork Chops: Pat the pork chops dry with paper towels and season generously with salt and black pepper on both sides. This helps to enhance flavor and achieve a nice sear.

    Sear the Pork Chops: In a large skillet over medium heat, add the olive oil. Once the oil is hot, carefully place the pork chops in the skillet. Sear for about 4-5 minutes on each side or until they develop a golden-brown crust and are cooked through (internal temperature should be 145°F). Remove the chops from the skillet and cover them with aluminum foil to keep warm.

      Cook the Bacon: In the same skillet, add the chopped bacon. Cook over medium heat until crispy, about 4-5 minutes. Use a slotted spoon to remove the bacon from the skillet, allowing the fat to remain. Set the bacon aside on a paper towel-lined plate.

        Sauté Aromatics: In the bacon fat, add the chopped onion and sauté for about 2-3 minutes until translucent. Add the minced garlic and cook for an additional 30 seconds until fragrant.

          Make the Sauce: Pour in the chicken broth, scraping up any brown bits from the bottom of the skillet. Allow it to simmer for about 3-4 minutes until reduced by half. Stir in the heavy cream, Dijon mustard, and sage. Let it simmer for another 2-3 minutes until the sauce thickens slightly.

            Combine: Return the crispy bacon to the pan and stir well to incorporate. Season with additional salt and pepper to taste.
