Pork Chops with Mushroom Gravy

4 bone-in pork chops, about 1-inch thick

Salt and pepper to taste

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 ounces mushrooms, sliced (such as cremini or button)

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 cup chicken broth

1 cup heavy cream

2 tablespoons Worcestershire sauce

1 tablespoon Dijon mustard

Fresh parsley, chopped (for garnish)

Instructions
 

Season the Pork Chops: Pat the pork chops dry with paper towels. Season both sides with salt and pepper.

    Sear the Pork Chops: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops and sear for about 3-4 minutes on each side until golden brown and cooked through. Remove the chops from the skillet and set them aside on a plate.

      Sauté Onions and Garlic: In the same skillet, add the chopped onion. Sauté for about 2-3 minutes until the onions become translucent. Add the minced garlic and cook for another 30 seconds, until fragrant.

        Cook the Mushrooms: Add the sliced mushrooms to the skillet along with the fresh thyme. Cook for 5-7 minutes, stirring often, until the mushrooms are browned and tender.

          Make the Gravy: Pour in the chicken broth, scraping up any brown bits from the bottom of the skillet. Let it simmer for about 3-4 minutes. Then, stir in the heavy cream, Worcestershire sauce, and Dijon mustard. Bring the mixture to a gentle simmer and let it thicken for about 5 minutes.

            Combine and Heat Through: Return the seared pork chops back to the skillet, spooning some of the mushroom gravy over them. Allow the chops to warm through in the gravy for about 2-3 minutes.

              Serve: Garnish with chopped fresh parsley and serve the pork chops with mushroom gravy alongside mashed potatoes, rice, or your favorite vegetable.
