2 tablespoons olive oil

2 cloves garlic, minced

1 cup heavy cream

3 oz blue cheese, crumbled

1 tablespoon Dijon mustard

1 tablespoon fresh chives, chopped

1 tablespoon parsley, chopped

Begin by seasoning the pork medallions generously with salt and black pepper on both sides.

    Heat olive oil in a large skillet over medium-high heat. Once hot, add the pork medallions, making sure not to overcrowd the skillet. Sear for about 3-4 minutes on each side, until they are browned and reach an internal temperature of 145°F. Remove them from the skillet and let them rest on a plate, covering loosely with foil to keep warm.

      In the same skillet, lower the heat to medium and add minced garlic, sautéing until fragrant (about 30 seconds).

        Pour in the heavy cream and stir in the Dijon mustard. Cook for 2-3 minutes until the cream begins to simmer and thicken gently.

          Add the crumbled blue cheese to the cream mixture, stirring continuously until the cheese is melted and the sauce is smooth. Season with additional salt and pepper to taste.

            Once the sauce is ready, return the pork medallions to the skillet, spooning the sauce over them to coat well. Allow them to cook for another minute in the sauce on low heat.
