1.5 lbs pork tenderloin

2 tablespoons olive oil

Salt and pepper, to taste

3 cloves garlic, minced

1 cup chicken broth

1 tablespoon Dijon mustard

2 tablespoons whole grain mustard

1 cup heavy cream

2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Season the Pork: Pat the pork tenderloin dry with paper towels. Season generously with salt and pepper on all sides.

      Sear the Pork: In a large oven-safe skillet, heat olive oil over medium-high heat. Add the pork tenderloin and sear it for about 3-4 minutes on each side, until all sides are golden brown.

        Add Garlic: Once seared, remove the pork and set it aside on a plate. In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.

          Deglaze with Broth: Pour in the chicken broth, scraping up any brown bits from the bottom of the skillet. Bring to a simmer, then return the pork to the skillet.

            Combine Mustards: In a small bowl, whisk together the Dijon mustard and whole grain mustard. Brush this mixture over the pork tenderloin.

              Bake: Transfer the skillet to the preheated oven and bake for about 20-25 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

                Remove and Rest: Once cooked, remove the skillet from the oven and let the pork rest for 5-10 minutes before slicing.

                  Make the Creamy Sauce: While the pork rests, place the skillet back on the stove over medium heat. Whisk in the heavy cream and thyme. Cook for 3-5 minutes, stirring occasionally, until the sauce is thickened.

                    Serve: Slice the pork tenderloin into medallions and arrange them on a serving platter. Drizzle the creamy mustard sauce over the pork and sprinkle with chopped parsley for garnish.
