1.5 pounds pork tenderloin

2 tablespoons Dijon mustard

1 tablespoon whole grain mustard

3 tablespoons olive oil

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper to taste

1 cup chicken broth

1 tablespoon apple cider vinegar

Marinate the Pork: In a bowl, mix both mustards, olive oil, honey, minced garlic, rosemary, thyme, salt, and pepper. Rub the mixture all over the pork tenderloin and let it marinate for at least 30 minutes (or overnight in the fridge for deeper flavor).

    Preheat the Oven: Preheat your oven to 400°F (200°C).

      Sear the Tenderloin: In an oven-safe skillet, heat a drizzle of olive oil over medium-high heat. Once hot, add the marinated pork tenderloin. Sear for about 2-3 minutes on each side until it’s golden brown.

        Deglaze the Pan: After searing, remove the tenderloin from the skillet and set it aside. Pour the chicken broth and apple cider vinegar into the pan, scraping up any browned bits from the bottom.

          Roast the Pork: Place the pork tenderloin back into the skillet. Spoon some of the sauce over the top. Transfer the skillet to the preheated oven and roast for about 20-25 minutes or until the pork reaches an internal temperature of 145°F (63°C).

            Rest and Serve: Once cooked, remove the tenderloin from the oven and let it rest for 5-10 minutes. Slice it into 1-inch medallions and serve drizzled with the pan sauce.

              Garnish: Optionally, garnish with additional fresh herbs for a fresh touch.
