Ingredients

1 lb beef stew meat, cut into 1-inch cubes

1 tablespoon olive oil

1 medium onion, chopped

2 cloves garlic, minced

2 carrots, chopped

2 celery stalks, chopped

4 cups beef broth

2 medium potatoes, diced

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

2 cups potato gnocchi (store-bought or homemade)

1 cup frozen peas (optional)

Fresh parsley, chopped for garnish

Instructions

In a large pot, heat the olive oil over medium-high heat. Add the beef stew meat and sear on all sides until browned. Remove the meat and set aside.

In the same pot, add the chopped onion and garlic. Sauté for about 3 minutes until the onion becomes translucent.

Add the carrots and celery, cooking for another 5 minutes until softened.

Return the browned beef to the pot. Pour in the beef broth, and add the diced potatoes, dried thyme, dried oregano, salt, and pepper.

Bring the stew to a boil, then reduce the heat to low and cover. Let it simmer for about 1.5 hours, or until the beef is tender.

Stir in the potato gnocchi and frozen peas (if using) during the last 5 minutes of cooking. Simmer until the gnocchi floats to the top and is cooked through.

Taste and adjust seasoning if necessary.
