Ingredients

For the Pretzel Bites:

1 ½ cups warm water (110°F)

1 packet (2 ¼ teaspoons) active dry yeast

1 tablespoon granulated sugar

4 cups all-purpose flour

1 teaspoon kosher salt

⅔ cup baking soda (for boiling)

Coarse sea salt (for sprinkling)

For the Cheddar Sauce:

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 cup milk

1 ½ cups shredded sharp cheddar cheese

½ teaspoon garlic powder

¼ teaspoon cayenne pepper (optional)

Salt and pepper to taste

Instructions

Prepare the Pretzel Dough:

    - In a large mixing bowl, combine warm water, yeast, and sugar. Allow it to sit for about 5-10 minutes until frothy.

      - Add the flour and kosher salt to the yeast mixture. Mix until a soft dough forms.

        - Knead the dough on a floured surface for about 5 minutes until smooth.

          - Place the dough in a lightly greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

            Preheat and Prepare for Boiling:

              - Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

                - In a large pot, bring 10 cups of water to a boil and add the baking soda.

                  Shape the Pretzel Bites:

                    - Once the dough has risen, punch it down and turn it onto a floured surface. Roll it out into a long rope (about 1-inch thick).

                      - Cut the rope into bite-sized pieces (approximately 1-inch sections).

                        Boil the Pretzel Bites:

                          - Boil the pretzel bites in batches for about 30 seconds each. Use a slotted spoon to remove them and let them drain on a towel.

                            - Place the boiled pretzel bites on the prepared baking sheet and sprinkle coarse sea salt on top.

                              Bake:

                                - Bake in the preheated oven for 12-15 minutes or until golden brown. Remove from the oven and let cool slightly.

                                  Make the Cheddar Sauce:

                                    - In a medium saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for 1-2 minutes.

                                      - Slowly add the milk, whisking constantly until the mixture thickens (about 3-5 minutes).

                                        - Reduce the heat to low, then gradually stir in the shredded cheddar cheese, garlic powder, cayenne pepper (if using), and season with salt and pepper to taste. Stir until the cheese is fully melted and the sauce is smooth.

                                          Serve:

                                            - Serve the warm pretzel bites with the creamy cheddar sauce on the side for dipping. Enjoy!
