Ingredients

2 ½ cups all-purpose flour

1 teaspoon salt

1 teaspoon sugar

1 cup unsalted butter, cold and cubed

¾ cup ice cold water

Instructions

In a large bowl, mix together the flour, salt, and sugar until well combined.

Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to blend the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.

Gradually add the ice-cold water, mixing gently with a fork until the dough begins to come together. Avoid over-mixing.

Turn the dough out onto a lightly floured surface, and shape it into a rectangle. Wrap it in plastic wrap and refrigerate for at least 1 hour.

Once chilled, remove the dough from the refrigerator and place it on a floured surface. Roll the dough out into a rectangle about 1 inch thick.

Fold the dough into thirds (like a letter), turn it 90 degrees, and roll it out again into a rectangle. Repeat the folding and rolling process three more times, chilling the dough for 30 minutes between each turn. This creates the flaky layers.

After the final fold and chill, your puff pastry dough is ready to be used for any sweet or savory recipe!
