2 cups pulled pork (cooked and shredded)

4 medium potatoes, diced

1 yellow onion, diced

1 red bell pepper, diced

1 green bell pepper, diced

3 cloves garlic, minced

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (optional)

2 tablespoons vegetable oil

Salt and pepper, to taste

4 eggs (optional, for topping)

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: Place the diced potatoes in a pot, cover with water, and bring to a boil. Cook for approximately 5-7 minutes until slightly tender but still firm. Drain and set aside.

    Cook the Vegetables: In a large skillet, heat 2 tablespoons of vegetable oil over medium heat. Add the diced onion and cook for about 3-4 minutes until translucent.

      Add Peppers and Garlic: Stir in the diced red and green bell peppers and minced garlic. Sauté for an additional 3 minutes until the peppers soften.

        Combine Ingredients: Add the drained potatoes, pulled pork, smoked paprika, and cayenne pepper (if using) to the skillet. Season with salt and pepper. Stir well to mix all ingredients.
