Pumpkin Cheesecake Bars

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons brown sugar

1 teaspoon cinnamon

1 (8 oz) package cream cheese, softened

½ cup granulated sugar

¼ cup brown sugar

1 teaspoon vanilla extract

1 large egg

1 cup pumpkin puree

1 teaspoon pumpkin pie spice

1 tablespoon all-purpose flour

Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal later.

    In a mixing bowl, combine graham cracker crumbs, melted butter, brown sugar, and cinnamon. Mix until well combined and crumbly.

      Press the mixture firmly into the bottom of the prepared baking pan to form an even crust. Bake in the preheated oven for 10 minutes, then remove and let cool slightly.

        In a large bowl, beat the cream cheese until smooth. Add the granulated sugar, brown sugar, and vanilla extract, mixing until creamy.

          Beat in the egg until just combined, being careful not to overmix.

            Add the pumpkin puree, pumpkin pie spice, all-purpose flour, and a pinch of salt. Mix until fully combined and smooth.

              Pour the pumpkin cheesecake mixture over the cooled graham cracker crust, spreading it evenly.

                Bake in the oven for 30-35 minutes, or until the edges are set and the center is slightly jiggly.

                  Once baked, remove from the oven and allow to cool to room temperature. Then refrigerate for at least 4 hours, or overnight, until set.

                    To serve, lift the bars out of the pan using the parchment paper and cut into squares.
