Instructions
In a large mixing bowl, combine the rolled oats, ground flaxseed, pumpkin spice mix, and salt. Stir until well incorporated.
In another bowl, mix together the almond butter, pumpkin puree, and honey or maple syrup until smooth.
Pour the wet mixture into the dry ingredients and combine thoroughly. If using, fold in the chocolate chips or chopped nuts.
Once the mixture is fully combined, refrigerate it for about 30 minutes to firm up.
After refrigeration, scoop out tablespoon-sized portions and roll them into balls using your hands.
Place the energy balls on a parchment-lined baking sheet. You can optionally roll them in extra pumpkin spice mix or shredded coconut for added flair.
Refrigerate again for about 15 minutes to help set the balls.
Notes
Arrange the energy balls in a decorative bowl and sprinkle some pumpkin spice on top for an inviting display.
