So, what exactly are quesadilla cones? At their core, quesadilla cones are a creative reimagining of traditional quesadillas. Instead of being flat, these cones are rolled into a shape that holds the fillings securely, allowing for a delightful combination of textures and tastes. The outer layer remains crispy while the inside is warm and gooey, thanks to the melted cheese and various fillings.

Ingredients

4 large flour tortillas

2 cups shredded cheese (cheddar, mozzarella, or a blend)

1 cup cooked protein (chicken, beef, or black beans)

1/2 cup diced bell peppers (any color)

1/2 cup corn (canned or frozen)

1/4 cup chopped green onions

1 teaspoon taco seasoning

Cooking spray or olive oil

Fresh cilantro (for garnish)

Salsa or guacamole (for serving)

Instructions

Preheat the Oven or Air Fryer: If using an oven, preheat to 375°F (190°C). For an air fryer, preheat to 360°F (182°C).

Prepare the Tortillas: In a skillet over medium heat, soften the tortillas one at a time for about 30 seconds on each side until pliable. This will make them easier to shape into cones.

Create the Cone Shape: Roll each tortilla into a cone shape and secure with a toothpick or twine if necessary. Lightly spray with cooking spray or brush with olive oil. Place the cones upright in a muffin tin (for oven) or air fryer basket.

Fill the Cones: In a mixing bowl, combine the cheese, cooked protein, bell peppers, corn, green onions, and taco seasoning. Spoon the mixture generously into each tortilla cone, packing it in slightly.

          Bake or Air Fry:

            - Oven: Bake for 15-20 minutes until the tortillas are golden and the cheese has melted.

              - Air Fryer: Cook for 6-8 minutes or until the cones are crispy and the cheese is bubbly.

Serve: Carefully remove the cones from the muffin tin or air fryer. Let them cool for a minute, then garnish with fresh cilantro. Serve with salsa or guacamole for dipping.

Prep Time: 15 minutes | Total Time: 35 minutes | Servings: 4 cones per recipe
