2 cups white American cheese, shredded

1 cup Monterey Jack cheese, shredded

1 cup whole milk

1 tablespoon butter

1 small onion, finely chopped

2 cloves garlic, minced

1 jalapeño, finely diced (seeds removed for less heat)

1 cup diced tomatoes (canned or fresh)

1 teaspoon cumin

Salt to taste

Fresh cilantro, for garnish

Instructions
 

In a medium saucepan over medium heat, melt the butter. Add the chopped onion and sauté for about 2-3 minutes until softened.

    Stir in the minced garlic and diced jalapeño, cooking for an additional 1-2 minutes until fragrant.

      Lower the heat and gradually add the shredded white American cheese, shredded Monterey Jack cheese, and whole milk, stirring gently until the cheese has melted and the mixture is smooth.

        Fold in the diced tomatoes and add cumin and salt. Stir well to incorporate all the flavors, cooking for another 2-3 minutes. If the queso is too thick, add more milk to reach your desired consistency.

          Remove from heat and garnish with fresh chopped cilantro before serving.
