2 cups whole milk

1 cup heavy cream

1/4 cup white vinegar

1/2 teaspoon salt

1/4 teaspoon baking soda

1/2 tablespoon jalapeño, finely chopped (optional for heat)

Fresh cilantro, for garnish

Instructions
 

In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat and stir gently until it reaches a simmer (do not let it boil).

    Once it simmers, remove from heat and stir in the white vinegar. Let it sit for about 10-15 minutes; the mixture should start to curdle.

      After curdling, gently stir in the salt and baking soda to enhance the flavor. If desired, add the finely chopped jalapeño for a spicy kick.

        Set a fine-mesh strainer over a large bowl. Pour the curdled mixture into the strainer and let it drain for about 30 minutes to 1 hour, depending on your desired texture (less time for creamier queso, more for a firmer cheese).

          Once drained, transfer the queso fresco to a bowl and gently mix. Taste and adjust seasoning if necessary.

            Pack the cheese into a small mold or simply shape into a disc with your hands. Chill in the fridge for at least 1 hour to firm up further.

              When ready to serve, unmold the cheese and sprinkle with fresh cilantro.
