Ingredients

2 cups elbow macaroni

1 lb ground beef (or turkey for a leaner option)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 cup beef broth

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup shredded cheddar cheese

Fresh cilantro or green onions for garnish (optional)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil and cook the elbow macaroni according to the package instructions. Drain and set aside.

Brown the Meat: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.

Combine Ingredients: Add the kidney beans, diced tomatoes (with juices), beef broth, chili powder, cumin, garlic powder, onion powder, salt, and pepper to the skillet with the browned beef.

Simmer: Stir everything together, bringing it to a gentle boil. Lower the heat and let it simmer for about 5-10 minutes, allowing the flavors to meld.

Mix in Pasta: Fold in the cooked elbow macaroni until everything is well combined.

Cheesy Finish: Sprinkle the shredded cheddar cheese over the top and let it melt, covering the skillet with a lid for a couple of minutes.

Serve: Portion the chili mac into bowls and garnish with fresh cilantro or green onions if desired. Enjoy your quick and hearty meal!
