Ingredients
  

1 pound ground beef (or ground turkey for a healthier option)

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (14 oz) diced tomatoes with green chilies

1 packet taco seasoning (or homemade blend)

4 cups beef or chicken broth

1 small onion, diced

2 cloves garlic, minced

1 bell pepper (any color), chopped

1 tablespoon olive oil

Salt and pepper to taste

Optional toppings: shredded cheese, sour cream, tortilla chips, sliced jalapeños, fresh cilantro

Instructions
 

In a large pot, heat olive oil over medium heat. Add the diced onion and bell pepper, and sauté for about 3-4 minutes until softened.

    Add the minced garlic and ground beef (or turkey) to the pot. Cook, stirring frequently, until the meat is browned and fully cooked, about 5-7 minutes. Drain any excess fat if necessary.

      Stir in the taco seasoning, allowing the spices to coat the meat and vegetables evenly.

        Add the black beans, kidney beans, corn, diced tomatoes with green chilies, and the broth to the pot. Stir to combine all ingredients.

          Bring the soup to a gentle boil, then reduce the heat to low and let it simmer for about 15-20 minutes, allowing the flavors to meld together.

            Taste and adjust seasoning with salt and pepper as needed.

              Serve the soup hot, garnished with your choice of toppings such as shredded cheese, sour cream, tortilla chips, sliced jalapeños, and fresh cilantro.
