Ingredients

2 packs of instant ramen noodles (discard flavor packets)

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional for vegetarian/vegan, use mushroom soy sauce instead)

1 teaspoon sesame oil

1 tablespoon vegetable oil

1 cup broccoli florets

1 red bell pepper, sliced

1 carrot, julienned

1 cup snap peas

3 green onions, chopped

2 cloves garlic, minced

1 teaspoon ginger, freshly grated

Sesame seeds for garnish

Instructions

Cook the Noodles: Bring a pot of water to a boil. Add the ramen noodles and cook according to package instructions for about 3-4 minutes. Drain and set aside.

Prepare the Sauce: In a small bowl, mix together the soy sauce, oyster sauce or mushroom soy sauce, and sesame oil. This will be your stir-fry sauce.

Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat.

Sauté the Veggies: Add the minced garlic and grated ginger to the pan; sauté for about 30 seconds until fragrant. Then add the broccoli florets, bell pepper, carrot, and snap peas. Stir-fry for about 4-5 minutes, or until the vegetables are tender but still crisp.

Add the Noodles: Add the drained ramen noodles to the pan with the vegetables. Pour the stir-fry sauce over the noodles and mix well to combine everything. Stir-fry for another 2-3 minutes, ensuring the noodles are heated through and evenly coated with the sauce.

Finish and Serve: Once everything is well incorporated and heated through, remove the pan from heat. Stir in the chopped green onions.

Garnish and Enjoy: Serve immediately, garnished with a sprinkle of sesame seeds on top for added crunch and flavor.
