Ingredients
  

2 cups cooked shredded chicken

1 cup ranch dressing

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 can (10 oz) enchilada sauce (red or green)

8 small flour tortillas

1 cup corn (fresh, frozen, or canned)

1/2 cup diced red onion

1/2 teaspoon garlic powder

1/2 teaspoon paprika

1 tablespoon olive oil

Fresh cilantro, for garnish

Optional toppings: diced tomatoes, sliced jalapeños, sour cream

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare Chicken Filling: In a large bowl, combine the shredded chicken, 1/2 cup of ranch dressing, 1/2 cup of shredded cheddar cheese, 1/2 cup of shredded Monterey Jack cheese, corn, diced red onion, garlic powder, and paprika. Mix well until all ingredients are combined.

      Assemble Enchiladas: Spread a thin layer of enchilada sauce on the bottom of a 9x13-inch baking dish. Take a tortillas, spoon approximately 1/3 cup of the chicken filling into the center, roll it up tightly, and place seam-side down in the baking dish. Repeat with the remaining tortillas and filling.

        Add Sauce and Cheese: Once all enchiladas are arranged in the baking dish, pour the remaining enchilada sauce evenly over the top. Drizzle the remaining ranch dressing and sprinkle the rest of the shredded cheddar and Monterey Jack cheese over the sauce.

          Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

            Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with freshly chopped cilantro and any additional toppings you desire, such as diced tomatoes or jalapeños. Serve warm.
