1 cup unsalted butter, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 teaspoon almond extract

2 cups all-purpose flour

1/4 teaspoon salt

1/2 cup chopped almonds (toasted if desired)

1/2 cup raspberry jam (seedless preferred)

Extra powdered sugar for dusting

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and powdered sugar together until light and fluffy, about 2-3 minutes.

      Add Extracts: Mix in the vanilla and almond extracts until well combined.

        Combine Dry Ingredients: In another bowl, whisk together the all-purpose flour and salt. Gradually add the flour mixture to the creamed butter, mixing until just combined.

          Incorporate Almonds: Gently fold in the chopped almonds until they are evenly distributed throughout the dough.

            Form Cookies: Using a tablespoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each ball slightly using the back of a fork or the palm of your hand.
