1 cup fresh raspberries (plus extra for garnish)

8 oz cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup graham cracker crumbs

1/4 cup unsalted butter, melted

1/4 teaspoon salt

Prepare the crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and salt. Mix until the crumbs are evenly coated and resemble wet sand.

    Form the base: Line a mini muffin tin with paper liners or spray lightly with non-stick spray. Press about 1 tablespoon of the graham cracker mixture into the bottom of each compartment, packing it down firmly. Bake in a preheated oven at 350°F (175°C) for 5-7 minutes until lightly golden. Remove and let cool.

      Create the filling: In a mixing bowl, beat the softened cream cheese until smooth using an electric mixer. Add the powdered sugar and vanilla extract, mixing until well combined and creamy.

        Assemble the bites: Spoon the cream cheese filling into each cooled graham cracker crust, filling them to the top. Garnish each bite with a couple of fresh raspberries pressed gently into the cream cheese layer.
