1 cup almond flour

1 cup all-purpose flour

1/2 cup powdered sugar (plus extra for dusting)

1/2 teaspoon salt

1/2 teaspoon baking powder

1/2 cup unsalted butter, softened

1/2 teaspoon vanilla extract

1 large egg

1/2 cup raspberry jam (seedless, or strain if necessary)

1/4 cup sliced almonds for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a bowl, whisk together the almond flour, all-purpose flour, powdered sugar, salt, and baking powder until well combined. Set aside.

      Cream the Butter: In a separate mixing bowl, cream the softened unsalted butter with the vanilla extract until light and fluffy.

        Add Egg: Beat in the egg until fully incorporated into the butter mixture.

          Combine Mixtures: Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms. Make sure not to overmix.

            Chill the Dough: Cover the dough with plastic wrap and refrigerate for about 30 minutes until firm but pliable.

              Shape the Cookies: Once the dough is chilled, take about 1 tablespoon of dough and flatten it in your palm. Place about 1 teaspoon of raspberry jam in the center, wrap the dough around the jam, and roll it into a ball. Repeat with remaining dough and jam.

                Place on Baking Sheet: Arrange the jam-filled dough balls on the prepared baking sheet, leaving some space between them. If using, sprinkle the tops with sliced almonds for added texture.

                  Bake: Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. The centers may look a bit soft but will firm up as they cool.
