For the Cupcakes:

1 ¾ cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

¾ cup whole milk

Zest of 1 lemon

½ cup fresh raspberries (plus extra for garnish)

For the Lemon Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

2 tablespoons fresh lemon juice

Zest of 1 lemon

Pinch of salt

For the Raspberry Sauce (optional):

1 cup fresh raspberries

¼ cup granulated sugar

1 tablespoon lemon juice

Preheat Oven: Preheat your oven to 350°F (175°C). Line a standard muffin tin with cupcake liners.

    Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In another large bowl, cream the softened butter and granulated sugar together using an electric mixer until light and fluffy.

        Add Eggs and Flavors: Add the eggs one at a time, mixing well after each addition. Mix in the vanilla extract and lemon zest.

          Combine Mixtures: Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start and end with the flour mixture, mixing until just combined.

            Fold in Raspberries: Gently fold in the fresh raspberries, being careful not to break them up too much.

              Bake the Cupcakes: Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let them cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

                Prepare Frosting: In a medium mixing bowl, beat together the softened cream cheese and butter until smooth. Gradually add powdered sugar, mixing on low speed until combined, then on high speed until fluffy. Mix in the lemon juice, lemon zest, and a pinch of salt until well combined.

                  Optional Raspberry Sauce: In a small saucepan over medium heat, combine fresh raspberries, sugar, and lemon juice. Cook for 5-7 minutes until the raspberries break down. Strain if desired for a smoother sauce.

                    Assemble the Cupcakes: Once the cupcakes are cooled, frost them generously with the lemon cream cheese frosting. Drizzle with raspberry sauce if using and garnish with extra fresh raspberries.
