2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 can (14 oz) crushed tomatoes

1 tablespoon tomato paste

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional, for heat)

Salt and black pepper to taste

1 tablespoon sugar (to balance acidity)

½ cup fresh spinach, roughly chopped

¼ cup grated Parmesan cheese (plus more for serving)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until the onion is translucent, about 3-4 minutes.

    Stir in the crushed tomatoes and tomato paste, mixing well until combined.

      Sprinkle in the dried oregano, basil, and red pepper flakes (if using). Season with salt, black pepper, and sugar to taste. Allow the sauce to simmer for approximately 15 minutes, stirring occasionally.

        After the sauce has thickened slightly, add the chopped spinach and cook for an additional 2-3 minutes until wilted.

          Stir in the grated Parmesan cheese until melted and well incorporated into the sauce.

            Taste and adjust seasoning if necessary. If you prefer a smoother sauce, you can blend it using an immersion blender for a few seconds until your desired consistency is reached.
