1 package of fresh cheese ravioli

4 cups vegetable broth

1 cup diced tomatoes (canned or fresh)

1 medium onion, diced

2 cloves garlic, minced

2 cups fresh spinach or kale, roughly chopped

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional)

2 tablespoons olive oil

Salt and pepper to taste

Grated Parmesan cheese for serving

Fresh basil leaves for garnish

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.
