2 cups cooked jasmine rice (preferably day-old)

1 pound shrimp, peeled and deveined

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 medium onion, diced

1 bell pepper (red or green), diced

2 cloves garlic, minced

2 green onions, sliced

2 large eggs

1 cup frozen peas and carrots mix

3 tablespoons soy sauce

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Season the Shrimp: In a bowl, toss the shrimp with Cajun seasoning until evenly coated. Set aside to marinate for about 15 minutes.

    Prepare the Skillet: In a large skillet or wok, heat olive oil over medium-high heat. Once hot, add the diced onion and bell pepper. Sauté for about 3-4 minutes, or until the vegetables are softened.

      Cook the Shrimp: Push the vegetables to the side, then add the seasoned shrimp to the skillet. Cook for about 2-3 minutes per side, or until the shrimp turn pink and are cooked through. Remove them from the skillet and set aside.

        Scramble the Eggs: In the same skillet, crack the eggs and scramble them until fully cooked. Incorporate the minced garlic during the last minute of cooking.

          Combine Ingredients: Add the cooked jasmine rice to the skillet, breaking up any clumps. Stir well to mix with the eggs and vegetables. Then, stir in the frozen peas and carrots and continue to cook for another 2-3 minutes.

            Add Flavor: Drizzle the soy sauce over the rice mixture and stir thoroughly to ensure an even coating. Add salt and pepper to taste.

              Finish the Dish: Return the cooked shrimp back to the skillet. Gently mix everything together and let it heat through for another minute or so.

                Garnish and Serve: Remove the skillet from heat and add the sliced green onions and chopped parsley. Serve the fried rice hot.
