4 cups red cabbage, thinly shredded

1 cup green cabbage, thinly shredded

1 carrot, grated

1 bell pepper (red, yellow, or orange), thinly sliced

1/2 cup fresh cilantro, chopped

1/4 cup green onions, sliced

1/3 cup apple cider vinegar

3 tablespoons honey (or maple syrup for vegan option)

1 tablespoon Dijon mustard

3 tablespoons sesame oil

Salt and pepper to taste

In a large mixing bowl, combine the shredded red cabbage, green cabbage, grated carrot, sliced bell pepper, chopped cilantro, and sliced green onions. Toss gently to mix.
