1 box red velvet cake mix

3 large eggs

1 cup vegetable oil

1 cup water

1 can (16 oz) cream cheese frosting

1 lb white chocolate (or candy melts)

1 tablespoon vegetable shortening (optional, for thinning chocolate)

Red and white sprinkles (for decoration)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    In a large bowl, prepare the red velvet cake mix according to the package instructions using the eggs, oil, and water. Mix until smooth.

      Pour the cake batter evenly into the prepared pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

        Remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then, transfer them to a wire rack to cool completely.

          Once the cakes are cooled, crumble them into a large bowl until they reach a fine, crumb-like consistency.

            Add the cream cheese frosting to the cake crumbs and mix well until fully combined; the mixture should be moist and hold together when rolled.

              Using your hands, scoop out about 1 tablespoon of the mixture and roll it into a ball. Place the balls on a parchment-lined baking sheet. Repeat this process until all the mixture is used.

                Freeze the cake balls for 30 minutes to firm up.

                  While the cake balls are chilling, melt the white chocolate (or candy melts) in a microwave-safe bowl in 30-second increments, stirring in between until completely smooth. If needed, add a tablespoon of vegetable shortening to thin the chocolate for easier dipping.

                    Dip the end of each lollipop stick into the melted chocolate, then insert it about halfway into a cake ball. This will help the stick stay in place.

                      Dip each cake pop into the melted chocolate, ensuring it is fully coated. Allow any excess chocolate to drip off.

                        Before the chocolate hardens, decorate the cake pops with red and white sprinkles.

                          Place the pops upright in a styrofoam block or a cake pop stand to let the chocolate set completely.

                            Once set, the cake pops are ready to be enjoyed!
