1 tablespoon cocoa powder

1 teaspoon baking soda

1 teaspoon salt

1 cup unsalted butter, softened

1 ½ cups granulated sugar

1 large egg

1 tablespoon red food coloring

1 teaspoon vanilla extract

Cream Cheese Filling:

8 oz cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

1 teaspoon vanilla extract

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Combine Dry Ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar with an electric mixer on medium speed until light and fluffy (about 3-4 minutes).

        Add Egg and Flavorings: Add in the egg, red food coloring, and vanilla extract. Mix until combined and smooth.

          Incorporate Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing on low speed until fully combined. The dough will be thick.

            Shape the Cookies: Use a tablespoon or cookie scoop to drop dollops of dough onto the prepared baking sheets, spacing about 2 inches apart. Flatten each dollop slightly with your fingers.

              Bake Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are firm. Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.

                Make the Cream Cheese Filling: While the cookies are cooling, prepare the filling. In a mixing bowl, beat the cream cheese and softened butter together until creamy. Gradually add the powdered sugar and vanilla, mixing until smooth and fluffy.
