1 and ½ cups all-purpose flour

1 cup granulated sugar

1 tablespoon cocoa powder

1 teaspoon baking soda

½ teaspoon salt

1 cup vegetable oil

1 cup buttermilk, room temperature

2 large eggs

2 tablespoons red food coloring

1 teaspoon vanilla extract

For the Strawberry Cheesecake Layer:

1 cup cream cheese, softened

½ cup powdered sugar

1 cup heavy cream, cold

1 teaspoon vanilla extract

1 cup fresh strawberries, pureed

For Garnish:

Fresh strawberries, sliced

Whipped cream

Grated chocolate (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.

    Prepare the Red Velvet Cake Base:

      - In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking soda, and salt.

        - In another bowl, mix the vegetable oil, buttermilk, eggs, red food coloring, and vanilla extract until well combined.

          - Gradually add the wet ingredients to the dry ingredients, mixing until just combined (do not overmix!).

            Bake the Cake: Pour the red velvet batter into the prepared cake pan. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

              Make the Strawberry Cheesecake Layer:

                - In a large bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.

                  - In another bowl, whip the heavy cream until stiff peaks form.

                    - Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate it.

                      - Finally, fold in the pureed strawberries until evenly mixed.

                        Assemble the Delight:

                          - Once the red velvet cake has cooled completely, carefully slice it horizontally into two layers.

                            - Place one layer of the cake on a serving plate. Spread half of the strawberry cheesecake mixture over this layer.

                              - Add the second layer of the cake on top and spread the remaining cheesecake mixture over the top of the cake.

                                Chill and Decorate: Refrigerate the cheesecake delight for at least 2 hours to set. Before serving, decorate the top with sliced fresh strawberries and dollops of whipped cream. Sprinkle with grated chocolate if desired.
