8 slices rye bread

1 cup sauerkraut, drained

1 pound corned beef, sliced

1 cup Swiss cheese, shredded

½ cup thousand island dressing

2 tablespoons butter, melted

1 teaspoon caraway seeds (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a baking dish, layer 4 slices of rye bread at the bottom.

      Spread half of the thousand island dressing over the bread slices.

        Evenly distribute the sauerkraut over the dressing, followed by half of the corned beef.

          Sprinkle half of the shredded Swiss cheese on top of the beef.

            Repeat the layers by adding another 4 slices of rye bread, the remaining thousand island dressing, the rest of the sauerkraut, corned beef, and Swiss cheese.

              Brush the top layer of bread with melted butter and sprinkle with caraway seeds if using.

                Cover the baking dish with aluminum foil and bake for 25 minutes.

                  After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

                    Once done, remove from the oven and let it cool for a few minutes. Slice into squares and garnish with chopped fresh parsley.
