Ingredients
  

4 cups corned beef, shredded

4 cups sauerkraut, drained

1 cup Swiss cheese, shredded

1 cup Thousand Island dressing

8 slices rye bread, cut into cubes

1 cup whole milk

3 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1 cup additional Swiss cheese, shredded (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare Baking Dish: Grease a large 9x13-inch baking dish with cooking spray or butter.

      Layer Ingredients:

        - In a large mixing bowl, combine the shredded corned beef, drained sauerkraut, and 1 cup of Swiss cheese. Stir until evenly mixed.

          - In another bowl, whisk together the Thousand Island dressing, whole milk, eggs, garlic powder, onion powder, and black pepper until smooth.

            Assemble the Casserole:

              - Spread half of the cubed rye bread evenly in the bottom of the prepared baking dish.

                - Layer the corned beef mixture over the bread, spreading it out evenly.

                  - Pour half of the dressing mixture over the meat and kraut layer.

                    - Add the remaining rye bread cubes on top and pour the remaining dressing mixture evenly over everything.

                      Add Topping: Sprinkle the additional 1 cup of Swiss cheese over the top of the casserole.

                        Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and bubbly.

                          Garnish and Serve: Once done, remove from the oven and let it cool for 5-10 minutes. Garnish with chopped parsley before serving.
